We only edge it with a spade prior to putting down mulch. I try to have it edged deep enough so that when mulch is put down, it still leaves a couple inches of a nice edge showing.
With each mowing, I just have the guys hold the trimmer so that the line is perpendicular to the edging. With straight shaft trimmers, we walk from right to left and just take off the tips of the grass along the edge. I make sure they don't REALLY edge it hard and cut into the soil.
Most of the clippings get tossed out of the mulch beds because there isn't too much there in the first place. Whatever doesn't get thrown out will get *lightly* blown out with a blower.
As long as you don't blow grass in with your mower, there shouldn't be too much from just trimming. Honestly, as long as you get 90% of it, the rest will blend in and no one will see it anyway.
